Another veggie-non-veggie dinner

It has been rather cold and gray and dark these days, so I kind of wanted to make something warm and with strong flavour.
For marco: tagliata con la salsa di chiati
For me: pure’ di patate e spinaci con la salsa di chianti
It was great!
The pure’ was superb-and-melt-in-the-mouth (should ask Gerardo what kind of potato he gave me)

For la salsa di chianti:
half glass of chianti
2 knob of butter
half shallot, thinly sliced
fresh thyme
sea salt and pepper

fry the shallot and thyme with the butter on low-medium heat until soft and abit brown, add the chianti, turn up the heat, and let the liquid evaporate till reduced into half, move from the fire, add the butter and stir to emulsify the sauce and season to taste.

The sauce was supposed to be for the meat, but it matched my pure’ and boiled spinach perfectly too.

A little afternoon break with marco while working with my old man a.k.a 5 years old 12inch pbook.

caffe macchiati in my favourite iitala cups…my computer is so slow that I can even knit when I wait for him to open files…but I love this old man, he has been with me all the time, travel around and never lets me down, even marco gets jealous sometimes hehehe

pasta.ai.carcioffi

Super sunny today and I remember I bought some beautiful artichokes from Gerardo (where I always go for fruits and vegs)

It has been raining alot in Italy and Gerardo said that makes the artichokes nice and tender this year.

Very simple recipe for my late lunch:
Pasta ai carcioffi for 2
2 artichokes
1 clove of garlic
some flat parsley
extra virgin olive oil
salt and pepper
250g pasta (I used mezze penne rigate)

Clean the artichokes, halve and put in a bowl of water with lemon, leave for 5 mins, drain and slice thinly (I also use the cleaned stalk)
Heat some olive oil in a pan, add garlic and then the artichokes.
Fry for 3 minutes, then add the parsley, salt and pepper.
Add some water and cover until tender, meanwhile, boil 2,5l or water, add some salt and cook the pasta.
Combine the cooked pasta with artichokes, drizzle with some oil and season to taste.
Serve with freshly grated parmesan
and buon apetito a tutti!
