insalata calda di tre cereali

Another sunny day! And it is a bit less windy than yesterday. I think, I hope spring is coming, I really miss the sun and my body is starting to crave for spring food. So today I kind of want to make something in the middle: warm salad of three grains: farro, millet and quinoa with pan roasted vegetables I got from Agricola Tosi yesterday. The peppers and eggplants look so good, too photogenic and almost too beautiful to be eaten!

La insalata calda di tre cereali / Warm salad of three cereals

30g farro
30g miglio (millet)
40g quinoa
1 layer of fennel
1 small carrot
1 celery
1 small eggplant
1 small pepperoni
smoked sea salt and pepper
extra virgin olive oil
black sesame

Wash the cereals separately with running water, boil 1l of water and add the millet first, and after 5 minutes the farro and after 5 minutes the quinoa, and leave to cook for 15 minutes.
In the mean time, cut the carrot, celery and fennel into 1 cm cubes, heat the oilve oil in a pan, add the the vegetables. Cut the eggplants into 4 lengthways, the into 0,5 cm thickness, cut the pepperoni into stripes and add the the pan. Cook until tender but still crisp. Drain the cereals, return to the pot, add the vegetables, season with smoked salt, pepper. Transfer into plates and drizzle with extra virgin olive oil and sprinkle with black sesame.
