pasta with baby zucchini and potato

One of the lunch with my brother, David while I am staying at his house for 5 days. I bought him a pot of my favourite herb: thyme and decided to make pasta with some of the vegetables I bought at mercato di san ambogio (very nice, my favourite market: a must visit in Florence) baby zucchini and the flowers too.
I was a little panicked because my brother did not tell me that he would also invited two of his friends, Audra and Gerd-Helen and I had only boiled 250g dried pasta! So I just quickly peeled and very thinly one potato and added it to the pasta :)
It was simple and yum ;)
Pasta with baby zucchini and potato
250g dried short pasta
1 medium potato, very thinly sliced
8 baby zucchini with flowers
2 cloves of garlic
some thyme stalks
sea salt and pepper
extra virgin olive oil
parmesan for grating
Boil some water in a big pan enough to hold the pasta. Cut the zucchini in 5 mm pieces, reserve the flowers, wash well, throw the middle part and thinly sliced.
Heat the oil in a pan, add peeled garlic and thyme until fragrant, add the sliced zucchini and stir for 5 minutes then add the flowers. Medium heat. Stir till soft, season with sea salt and pepper. When the water boils, add the pasta and the potato, and cook till al dente, drain, reserve some cooking liquid. Add the zucchini to the pasta, drizzle with some olive oil, mix and taste+season. Transfer to serving plates, add some grated parmesan and buon apetito!
