quinoa with spinach and spicy miso dressing

It has been a busy week for me (and it will be till end of next week as I am involved in an industrial design project) and when I work, I mostly put 110% of myself into it, so I do not realise that I am tired, but sometimes my body just screams: empower me! :) After I ate this, I usually feel much better, so even I don’t have much time now, I really want to share this recipe.

Quinoa with spinach and spicy miso dressing

Cooking soundtrack: foo fighters - there is nothing left to loose :)

150g quinoa, wash well with colander under running water

2 eggs, boiled

3 handful of spinach, clean and wash well

1 clove of garlic

3 tbsp of miso

1 pinch of coarse chilli

extra virgin olive oil

sea salt and pepper

Boil 1l of water, when boils add the quinoa and cook for 15-20 minutes or till open. Mix the miso+chilli+olive oil and set aside. 5 minutes before the quinoa is ready, add the spinach into the boiling quinoa. Roughly mash the egg with the fork in a big bowl. Drain the quinoa+spinach, add to egg mixture and toss with miso dressing. Buon

Buon apetito!
