sunday morning banana+honey pancake :)

This morning: messy+colourful table+lots of sun :) Been trying to make pancake with rice flour as my Indonesian soul been craving for kue serabiĀ (Indonesian pancake made with rice flour and coconut milk). I was trying to make it yesterday but the result was too dry, but this morning I saw that we had some banana at home and I thought it might be a perfect ingredient to add moistness to the pancake. I tried it and the result was beautiful :)


Banana+Honey Pancake

For 2

Sunday morning soundtrack: wake up compilation by e :)

1 egg

1 tbsp of honey

1/2 tsp salt

1/2 tsp baking powder

2 tbsp extra virgin olive oil

milk

rice flour

whole wheat flour

1/2 mature banana, mashed

butter, fresh ricotta, honey for topping

Beat the egg, a bit of milk, olive oil, salt, mashed banana and honey in a pitcher with a fork until all well mixed. Then add 3 tbsp of rice flour, 3 tbsp of whole wheat flour and the baking powder until forming a very thick mixture, then add milk to thin it, and add flour when you feel it is too liquidy (like this you don’t have crumbled mixture) until you reach a yoghurt-like mixture.

Heat the pan and cook the pancake until bubbly the flip to brown the other side. Pat with butter when they are still hot and serve with fresh ricotta, drizzle with honey and add a bit of cinnamon on top.

    it reminds me of our breakfast during christmas break..
    hiks..hiks..i never eat breakfast at school
    i miss you my sista
