Cesca, my kitchen is very minimally equipped, so to be able to cook well, I spend more time on sourcing ingredients for filling my cupboard and less time on cooking :) Please try and tell me if perhaps you improvise+twist it with other ingredients :) xx

I would actually say: because they are not raw hehehehe :) Usually the beets on the salad bar are those pre-cooked-and-pre-packed beets :) And I mix it with pear and apple so they look pinkish and quite cute :) Unfortunately this salad contains feta (that you don’t like) but you can replace it with salted ricotta (that you like :)
And I miss you too!

Looks really good Ce, when i look at salad line here, the beet looks bad n I just dont even wanna taste it hahahaha
I know what u will say, it’s not Italian beet hahaha
