wild asparagus, finocchietto and gruyère fritatta

This is the first time I tried wild asparagus and wild finocchietto, and I must say I love them! It is not so easy to find and I saw some on the tuesday market, bought some and also became friend with the seller, Giuseppe or you can call him Pippo :) His stall is not very big but he has a very good selection of fruits and vegetables. What I really like about him is that he never seems to rush (other seller just want you to buy and leave) but he will really explain many things about the fruits and vegetables he sells.

This fritatta was very simple to make, but I think the ingredients were so wonderful, it turned into a wonderful lunch. I was thinking to use parmiggiano for this fritatta but these wild asparagus have more delicate taste than the cultivated ones, the parmiggiano was going to overpowering so I used gruyère and I thought they turned out very nice together.

 

WIld Asparagus, Finocchietto and Gruyère Fritatta

For 2

A bunch of wild asparagus (around 300g)

Some stalks of wild finocchietto

3 eggs

Some gruyère cheese

Seasalt and pepper

1 green onion, finely sliced

a knob of butter

extra virgin olive oil

Heat up a frying pan with medium heat and add the butter and abit of olive oil, fry the green onion with low heat until soft but not coloured. In the meantime, wash the asparagus and finocchietto. Cut the hard part of the asparagus and discard. Separate the leave of the finocchietto and discard the stalks.

Add the asparagus and finocchietto to the green onion and turn up the heat to medium, leave until the vegetables are soft. In the meantime, mix the eggs in a bowl and add the sea salt and pepper. When the vegetables are cooked but still a bit crunchy, add the eggs mixture and grate some gruyère on the top. Leave until brown and flip the fritatta and cook until golder brown.

Divide the fritatta to plates, drizzle with some olive oil (and you can grate some more gruyère on top if you like)  and serve immediately with fresh bread
