no sugar cookies with white chocolate, dried apricot and hazelnut

Gooooooddddd Mooorrrrnnnning saturday!

Beautiful day today, sunny in florence in my little brother’s house. When we were having breakfast, I found out I forgot to put the butter back in the fridge last night, so it is kind of softened. So, why not make cookies? :) This is kind of spontaneous cookies, made without sugar (could not find a pack of brown sugar I bought some days ago), throwing whatever ingredients I could find in my brother’s kitchen cupboard. It turned out so delicious, perfectly sweetened by the barley malt, dried apricot and white chocolate, and the smell woke up the rest of my brother housemates…sorry I,Y and A! :)

And abit of snaps while waiting for the cookies in the oven, my brother having coffee with flipflops and mac in his back terrace, some flowers in the back garden…life is…simply beautiful :)

No Sugar Cookies with White Chocolate, Dried Apricort and Hazelnut

Makes around 24 cookies

Cooking soundtrack: bird singing and occasional train passing noise :)

100g butter, softened

80g white chocolate, roughly chopped

3 tbsp hazelnut, roughly chopped

A handful of unsweetened rice crisp, mildly crunched

2 tbsp barley malt (I think you can use honey as well)

5 dried apricort, thinly sliced

Zest of 1 orange, thinly sliced

pinch of salt

1 medium egg

1 tablespoonful of whole oat flour

3 tablespoonful organic white flour

1/2 tsp baking powder

Heat the oven to 200C

Mix well the softened butter with egg, add the barley malt, stir well. Add the white choc, hazelnut, rice crisp, dried apricot and orange zest, mix well. Add the salt, flour, oat flour and baking powder all together, stir until just mixed.

Use a teaspoon and your thumb, put the cookies on baking sheet.

Bake for 10-15 minutes till golden.

I love it with black black coffee or simple red tea :)
