pate di pere e cioccolato
Two weeks ago, I was trying to make Marco’s favourite jam: pear and chocolate, I did not really know how to make it, so I just did some trials and errors, and this came from one error that I made: the jam was too thick and have texture like black olive pate, but we really liked it so we decided to call it pate di pere e cioccolato - pear and chocolate pate :) We have just opened our second jar (the first one finished within a week) and have given some more to friends and family.
I used very ripe Italian pears I got from Pippo at the market, they are very sweet that I just put a little sugar, if your pears are not as sweet, you can adjust the amount of sugar. Also, this recipe is only for a 225g jar, but I think it is better to multiply them, as it takes time to make and trust me, it finishes rather…FAST! :)
Pate di Pere e Cioccolato - Pear and Chocolate Pate
Makes a 225g jar

350g very ripe pear
50g brown sugar
150g 50% dark chocolate, break into small pieces
Peel and roughly chop the pears, then mix with the sugar and leave for 2 hours. Transfer to a saucepan and bring to hard boil for 30 minutes. Pay attention and stir every now and then. 5 minutes before the pear ready, melt the chocolate over a boiling water. Add the hot pear jam into the melted chocolate. Transfer into a sterilized jar and close firmly. Put the jar with hot jam into boiling water (only up to 3 cm of the jar) and boil for 15 minutes. Remove from water, dry with tea towel and secure the lid.
