As to the question of gnocchi, a pasta doesn't need to be made out of potatoes to be called gnocchi.

The root word "gnocco" literally means lump, and can refer to other kinds of "lumped" pasta preparations, such as gnocchi alla romana (semolina and milk) or the diminutive gnocchetti sardi (semolina and water).</description>
