One.lunch.with.tenerumi

Tenerumi is not my new friend, she is a new vegetable I discovered at the market this week, I think she has cute name :) It is basically the leaves of Cucuzzi, the Sicilian groud, I made a soup with it weeks ago. Finally today, I could make lunch with ease. It has been a hectic period for me, with projects pouring on me and travelling too. I was so tired, I did not even want to bring my camera with me. And if you notice, my photographs are a little different, I am using another lens now, bigger, heavier and I am still not used to it.
Back to Tenerumi, this is a typical dish from Sicily, that Pipo taught me (he and his family come from Sicily). Very simpe dish and if you don’t add the cheese in the end, it is a vegan dish. It is very simple but full of flavour (Tenerumi is very flavourful vegetable)
Pasta Ai Tenerumi - Pasta with Tenerumi
Enough for 3 people
Cooking soundtrack: Ben Harper and The Alabama Boys!
300g Tenerumi, pick the leaves and tear some of the bigger ones and wash
150g dried long pasta, cracked into 3 (I used maccheroni alla chittara)
1/2 medium onion, thinly sliced
1 medium potato, cut into small cubes
Extra virgin olive oil
Sea salt and pepper
Parmesan for grating (optional)
Add some glugs of olive oil to a sauce pan, fry with medium heat till tender. Add the potato, cook for about 5 minutes, then add the tenerumi leaves. Stir well and add a glass of water and 1/2 tsp of salt.
Let simmer until the vegetables are tender. Add the cracked pasta and cook according to the pack instruction. Adjust the seasoning.
Remove from heat.
Transfer to serving plates, drizzle some olive oil and grated some parmesan.
Buon apetito!

Hi Eva, thanks for your post. I’m Sicilian and I love this vegetable. Do you maybe know if I can find Tenerumi in the UK and what is its translation?

Ciao Daniele, I think you can always try farmer’s market in UK. I am sorry I don’t know the translation of this vegetable in English, I will ask some friends in UK and I will let you know.
