Mango, banana and cinnamon muffin

I have just got back from a week trip to Solo, Central Java, visiting my best friend Deb and to Bali to meet Bruno and Lorenzo before they returned to Milan. I am back at home now, with loads of beautiful batik and ingredients I brought back from Bali and Surabaya. Still need to organise those, plus catching up with the wired part of me :) I opened my computer and see this recipe I should have posted before I left for the trip.
I just wanted simple banana muffin but with a bit of twist, so I added podang mangoes (again), I try to make as many food as I can with these beauties before their season ends :)



Looking at these pics, I wish I still have one of these now, with my cup of Himalayan tea…
Mango, Banana and Cinnamon Muffin
Makes around 8 small muffins and 10 medium ones

115 gram all purpose flour
115 gram whole wheat flour
1 1/2 tsp aluminum free baking powder
115 gram butter, room temperature
125 gram sugar
100 gram brown sugar (60 gram for the batter, 40 gram for sprinkling)
2 kampung eggs, lightly beaten
125 ml milk + 50 ml yoghurt, mixed well
1 ripe medium banana, mashed
1 medium podang mango, cut into 1 cm cubes
Some cinnamon sticks for decorating
Icing sugar for dusting
Heat the oven 190 C
Sift the flours and baking powder, set aside
With electric mixer, mix the butter and sugar until pale and fluffy, add the eggs one by one with low speed, add the yoghurt+milk until just mixed. Add the sifted flours and mix until just incorporated (do not over mix) the add the mashed banana and mango cubes.
Divide into muffin molds, sprinkle with brown sugar and add some cinnamon sticks on top
Bake for 10-15 minutes or until a toothpick inserted comes out clean
Let cool for 10 minutes
If you want to dust them with icing sugar, wait until they completely cool down.
