taupe.banana.bread

This banana bread spooked many people :) I can understand that the colour is a bit unusual, that is because I use black rice flour. The first question asked was: is it old? or is it still okay to eat? :) Well, it is not old and it is VERY ok to be eaten, it was moist and delicious and somehow earthy. I kind of love its taupe colour, and this colour also reminds me of my good friend Aliki in Milan :) I am sure she will love this kind of earthy bread.
Anyway, the ones responsible for me making this banana bread were these beauties :

These were from my tata’s son’s garden :)
I had this banana bread warm and cold, but I think I prefer it warm, so I usually take one or two slices in the morning and warm them with toaster and a cup of black black coffee and throw some Bonobo in the air, wonderful!

Taupe Banana Bread
Makes 2 loaf of 20×8x5 cm tin
100 gram butter, softened
1/2 cup sugar
2 eggs
125 ml yoghurt
1/2 tsp sea salt
2 ripe bananas, mashed
1 small apple, peel, cored and grated
1/2 cup oatmeal
1/4 cup black rice flour
1 cup flour, sifted
1 1/2 tsp baking powder
1/2 cup macadamia, roughly chopped
Preheat oven to 180C
Butter and flour two of 20×8x5 cm tin
Mix well butter and sugar, then add eggs, mix well with hand, then add the yoghurt then mashed banana and grated apple
Mix all dry ingredients and add all at once to the wet ingredients, mix until just incorporated
Transfer to the tin
Oven for 40-45 minutes or until a toothpick inserted comes out clean
Best served warm or warmed :)
