some.kind.of.hachis.parmentier

It takes a while to return to my normal rhythm of life, it has been full of friends and family visits for this past three weeks, and now, finally just us. This is Marco’s lunch today, I had a late late breakfast, so, I guess I will fix myself a bowl of green salad with tofu after writing this post. It was some kind of hachis parmentier. “Some kind” because I did not use diced meat and sauce lynnoaise, but ground beef and some fresh tomatoes, plus some shallots and lemon thyme (I prefer to use the common thyme but we only have this at home right now).

Marco seemed very happy eating it (he had two bowls), and Charlie was keeping on miauwing on me when I was cooking this, so I guess it tasted delicious :)

Some Kind of Hachis Parmentier

Makes 3 of 10 cm bowls

200 grams ground beef

2 shallots, thinly sliced

Some stalks of thyme

2 fresh tomatoes, diced

1 potato, peeled and diced

A knob of butter

5 tbsp of milk

Extra virgin olive oil

Sea salt and freshly ground pepper

Preheat the oven to 180C

In a pan, fry the shallots and thyme over medium heat. Add the ground beef, fry until it changes the colour. Add the diced tomatoes, cook over high heat for a couple of minutes, turn the heat to low and cover for 15 minutes. Season with sea salt and black pepper, set aside.

Boil a pan of water, boil the potatoes until tender. Mashed with butter and milk, then season with sea salt and pepper.

Butter three of the 10 cm bowls, add the beef then add the butter on top.

Place in a baking sheet filled with water, and place in the oven. Bake for 30 minutes or until browned.

    What a beautiful picture the first one (knowing that it is not easy to do nice picture with simple dishes.always my problem!) it seems really good!
